Meals in Minutes: Hot Chicken Salad
It's Kristin with your Monday's Meal in Minutes.
The weather here is turning "fallish" quickly. And it totally inspires me to break out the comfort food recipes to keep my tootsies warm!
One of our favorites is Hot Chicken Salad. And it's SO simple! There are a lot of different recipes out there, but here is mine.
Ingredients:
2 cups cooked chicken, chopped
2 cups chopped celery
1 cup mayo
2 tablespoons lemon juice
2 teaspoons onion
1/2 teaspoon salt
1/2 cup toasted almonds
1/2 cup shredded cheddar cheese
1 cup crushed potato chips
Directions:
1. Mix the first seven ingredients and pour into a baking dish.
2. Sprinkle with chips & cheese.
3. Bake at 450* for 10 minutes.
Tips:
I like to use cheddar & sour cream potato chips. I like cheese, though. A lot. I also use extra cheese on top. This is good to eat alone, or piled onto a fresh croissant.
Enjoy!

Just wanted to tell you I REALLY enjoy the recipes you share! I just made the hot chicken salad tonight. Hubby and I loved it!!! We made it your way with the cheddar sour cream chips. :) Very tasty!
is that 2 teaspoons onion powder? Or onion diced? I'm guessing the powder, but just checking. Christie got me to come look at this and I'm thinking it looks yum!
