Zoom in on my photoless layout?

Last night Andrew and I (Leila) were lucky enough to see RENT: The Broadway Tour here in Madison. We'd seen it before, down in Chicago last spring, but were quite geeked to have that opportunity again before the tour comes to an end on February 7. So when we purchased our tickets back in August, we had nothing but great expectations for a nice evening out while the boys stayed home with the babysitter. It never once entered our minds that there might be another event on that long-awaited night. Sometimes though, life throws that proverbial curve ball and you have to do your best to hit it out of the park. (Oh jeez, baseball metaphors? I think I need an intervention.) So, while Andrew and I were enjoying a night on the town, JP and Devin went with a friend to the church where JP participated in his first ever Pinewood Derby. To be honest, we didn't expect much from the event. I mean, we knew that the boys would have fun, but when you consider that JP's car was hastily built this past Saturday morning; well, you get the picture! Much to our very pleasant surprise and delight, our friend told us that JP's little pick-up truck had surpassed the previous track speed record (that had been made three years prior) in the very first heat of the night AND that he'd placed second overall for the event. Not bad for a last minute entry!

Ok, so enough ground work! All of the above leaves me with a dilemma: I have no pictures from the Derby!! I have this completely amazing absolutely must be scrapped moment in my 10 year old's life and I. HAVE. NO. PHOTOS!! So what's a scrapper to do in that situation? Oh, I am sooooooooooo glad you asked! You see, I love a good photoless layout. I love an opportunity to tell the story and have the STORY be the star, not the photos. Sometimes words need to be the forefront of a page. While I can admit that this situation would probably be better with photos, I'll make it work without.

Now, PHOTOless doesn't mean IMAGEless. Pft, I know--semantics. Photos are always images, but dear readers IMAGES are not always photos. Stay with me here, I'm getting there, I promise. There are ways to create a photoless page that isn't just the words (and yet it is...)

My first favorite thing to do is find graphics in kits that can represent the missing photos. A while back I did a page about my sons' laundry and it's ability to reproduce. I had no pictures of the laundry, but the kit I used had lots of pieces of clothing in it with which I was able to create a mountain of dirties. More recently, I used graphics to display a favorite line from a song because I sure don't own a green dress. ;)

Another option is to scan in memorabilia that you might have to represent the event or subject you're looking to scrap. JP came home from the Pinewood Derby with a certificate proclaiming him the fastest car and a little paper ribbon with a '2' on it for his second place finish. I've decided that my best option for scrapping this event is to scan those items and use them on my page as you can see below:


Of course, you could just use words. A lot, a few. Whatever floats your boat! Photoless pages can be fun, therapeutic, cathartic, whatever you want them to be. I'd love to see some of the pages you all have created or do create after this. Post a link in the comments for me to check them out!!

Thursday Tidbit...on Sunday


Hey all, Alix here (better late then never right?). I was racking my brain trying to decide what to post when I began day dreaming about the delicious brunch I had today...mmmm...


For you to fully appreciate the deliciousness of my breakfast you have to know a little back story...we've gone to Disney in January for a while now, in fact this was the first year we haven't been able to go due to budget and the girls starting in a new school. Well, I have been missing the mouse like crazy and all the fun the girls had when we'd go made the stress and exhaustion from the trip well worth it. One of my favorite things to do when we are there is to have breakfast at the Crystal Palace. The food there is amazing and Winnie the Pooh and friends were always a favorite of mine. If you have ever been there then you *have* to know about Pooh's Puffed French Toast, which is you ask me tastes more like a churro then french toast. It looks like this (picture courtesy of our 2007 trip)




Yeah, see what I mean? Anyway, guess what? I found a recipe that I can make at home which tastes very similar to the Disney version. And the best part? It's fat free. Okay, well it's not, but it doesn't matter it's soooo good you won't mind the extra 4 hours on the treadmill you'll spend working it off ;). Here is the recipe in case you are in the mood for yumminess beyond imagination...

What you'll need:
  • 2 whole eggs
  • 2-1/2 tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla extract
  • 2 cups milk
  • 1 cup flour
  • 2-1/2 tsp. baking powder
  • 12 slices bread, cut in half diagonally (I read somewhere Disney uses Challah bread, but I use regular old country white)
  • cinnamon sugar mix (4 tsp. cinnamon + 3/4 c. granulated sugar) <----you may want to make a little more then that I found I ran out.

What you do:

  • Mix eggs, sugar, salt, vanilla, and milk until blended.
  • Slowly add flour and baking powder, mix until smooth.
  • Dip bread in batter.
  • Fry in hot skillet with 1" oil until browned.
  • Drain on paper towels, and roll in sugar mix.
That's it! Eat and enjoy! It turned out fabulously, I wish I had taken a picture before it got gobbled up. Next time for sure! Let me know if you give it a try and if you do anything differently! I added sliced fresh strawberries and bananas on top and my dds put whipped cream on top. It would be extraordinary as a dessert too, with vanilla ice cream on top!

What's For Dinner?

I ask myself this question everyday! Obviously, I'm not the organized little homemaker who has her meal plans all in order. I wish I was...and I've tried...but for me it's unrealistic.

So yesterday I was thumbing through a new cookbook I got recently, Grain-Free Gourmet by Jodi Bager and Jenny Lass, and decided to try a new recipe for dinner! It took me two hours to make this so start it early, but it was so worth it! It was delicious!

This recipe is gluten free, egg free, nut free, and dairy free so if you are on a restricted diet this recipe is great for you. But even if you aren't, you and your family are really going to enjoy this healthy meal! My 4 year old gave this one a thumbs up!


One-pot Chicken and Sausage
Serves 6

INGREDIENTS

12 boneless, skinless chicken thighs
salt and black pepper
oil for browning
4 spicy sausages
1 onion, coarsely chopped
1 garlic clove, pressed
1 1/2 cups tomato juice
6 cups chopped napa cabbage
1 tsp dried rosemary
1/2 tsp dried basil
15 mini white button mushrooms
(or very coarsely chopped larger ones)
2 cups baby spinach

DIRECTIONS

1. Heat oven to 350 degrees

2. Season the chicken with salt and pepper. Heat a little oil in a large pot and brown the chicken in 2 to 3 batches.

3. When the chicken is browned on both sides, remove and place in a large casserole dish with a lid.

4. In the same pot, brown the sausages. Slice each sausage into 4 or 5 pieces and add to the casserole dish.

5. Add the onion and garlic to the pot and cook until translucent.

6. Add the tomato juice and bring to a boil.

7. Stir in the cabbage, rosemary, and basil.

8. Cover and bake for 40 minutes.

9. Remove from the oven and turn the oven to broil.

10. Add the mushrooms and spinach to the casserole dish and stir to combine.

11. Return to the oven and continue baking uncovered for 5 minutes.

12. Remove from the oven. Taste and add salt and pepper if necessary before serving.


Enjoy!!!

**One bit of advise though, our meal was a bit crispy because I thought I had 5 minutes while the casserole was on broil to scrapbook. Not a good idea!!! Keep an eye on it in the oven on broil because it may not need a whole 5 minutes. Your husband will probably let you know if he smells it burning but he won't go and get it out of the oven for you!

Impromptu Challenge for 1/12

Hey out there! Sprauncey1 (Kim) here with a special Tuesday post...

Since Jennifer is still recuperating from her injury and doesn't have anything new coming to her store this week, I decided to put together a little challenge for myself and for any of you all that want to play along. I'm not one to make "resolutions" every year. I have things I would like to work on, but I don't put pressure on my self to complete a list for the year. But looking back on last year, I realized how much unexpected things changed me and the way I think, or live, or look at the future. So I created a scrapbook page to remind myself of those pivotal things....and I made a template for you all to use as well!

I used Jennifer's A Flower In My Pocket because it is very cheery and springy, and everything on my list last year was good things (other years I might have chosen other colors to reflect that mood). Plus the happy flowers are just the thing to brighten my January Monday! Check it out in her store, it really is a very versatile kit and super cute too! Its on sale right now!! And so I put together this LO using the kit and various pictures I took throughout last year. A little journaling and a fun hap-hazard title and it was done! And years from now, I will look back and say "oh yeah that was when I started...or I can't believe I used to...and "how much have I changed these last few years!" Or whatever...who knows, but for now...these are what impacted me:

So to get you all started...I made a template out of my LO. Change it as much as you want, just get those memories down before you forget!!

Gallery Standout

Hi everyone, Rebecca aka Mamabee, here with my very first blog entry for Jennifer Fox. It's been super cold, here in the Midwest (and most of the nation) and since I don't want to brave the elements, it's the perfect excuse to scrap!! Boy, I wasn't disappointment in what I found with what you've done with Jennifer's designs. Her kits just knock my socks off... so enough yapping, lets see some awesome layouts!!!

Wow... double spreads is an area that I need to work on... and mrsgriff did an amazing job with her layout, 30! Using CuppyCakes kit, it is just perfect to document this milestone... and since I'm only 29 (yeah... like 5 years ago *wink*)... the 30th birthday party looks like a blast!

This layout is stunning! I love how she used the diangle design to show off pictures of sledding... genius! And the snowflakes are placed perfectly... excellent use of Jennifer's kit with Nikki, Warm Winter Wishes!

Gorgeous... that is simply the word to use... The lacing edging is such a finishing touch on an outstanding layout... even if I didn't already have this kit, I'd be dropping EVERYTHING to run to get this kit... Warm Winter Wishes, Jennifer Fox and Nikki Epperson.

Hybrid Heaven-JiffyPop

Hi all, it's Rach here....Ok are you ready for a super fun and EASY project?! SURE you are! Since Jennifer is Out of Commission, I am taking over the blog! shhhh...don't tell her.


I needed a small little gift for my son's friend who fell today and broke his arm while rollerskating. Poor kid. I thought this might come in handy (no pun intended) for a nice snack while he's home resting. It's JiffyPop popcorn! Just pull back the metal rim and place your 7" printed circle inside, close the rim...DONE! You could tie some neat ribbon on the handle of the popper if you wanted also. I think that's what I am going to do. Just make sure it is removed BEFORE popping so there's no fire hazard. Gosh I don't want to be responsible for that mess!

Product Spotlight: Warm Winter Wishes

Hey all! Kat here. Hoping everyone had a wonderful Holiday Season and a very Happy New Year!!! I know I did!!! We took our kiddos to visit Santa at the Fire Station in mid-December and my youngest is enamored with Santa. That's all he can talk about - even now. LOL!!! While I was off for a few days I decided that Jennifer and Nikki's new kit WARM WINTER WISHES would be perfect for scrapping an adorable picture I got of my little man telling Santa what he wanted for Christmas - he wanted "Santa" to come home with us - permanently!!! :) And for a 2 year old,
