Monday's Meals in Minutes
Happy Monday everyone! Trina here with your Monday's Meals in Minutes idea. Our household has to accomodate a few things - mommy's busy schedule, a 2 year old's picky appetite, and daddy's diabetes. A lot of my hubby's diabetes management is controlled by carb counting, so we're always looking for ways to cut out a few carbs. I saw this idea somewhere and it is so quick and easy, the toddler loves it and it's carb friendly (versus the full-blown fast food version!). The idea? Pita Pizzas. The pita bread generally has less carbs than regular pizza dough, not to mention less fat as well!
Pita Pizzas
Prep time: 5 min
Cook time: 10-15 min.
Ingredients:
Pitas (I used Olfason's Whole Wheat Pita Pockets)
Pizza Sauce
Cheese (I used skim mozza cheese)
Your favorite pizza toppings.
Start by putting your pitas on a cooking tray. Now, my hubby figured that one wouldn't be nearly enough so he asked me to cook 2 for him. The extra one was used as lunch the next day because he was stuffed on the first one!
