Monday Meals!

Hello faithful readers!! I've got another recipe for you all to try, this one is so good that my ten year old ate four of them tonight. (I indulged in three and the man had two double burgers and a single sans bun. I decided to try these for a couple reasons: I had two pounds of ground chicken in the house, and I love Cheddar cheese with my apples. So give these a go and let me know what you think. Oh--don't let the whole apple roasting thing scare you. It really is dead easy, and if you're just not up for it, grab the applesauce like the recipe says!

Chicken, Cheddar & Apple Sliders

4 granny smith apples (or 1/2 cup chunky applesauce)
1 teaspoon olive oil
2 lbs ground chicken
1/2 cup shredded cheddar cheese
1/2 cup dried breadcrumbs
1/4 cup milk
1/2 tablespoon poultry seasoning (I used McCormick Montreal Chicken seasoning as I have no poultry seasoning in the house.)
salt and pepper to taste



Preheat your oven to 350 degrees.

Peel and core the apples and place on a cookie sheet. Drizzle with olive oil and sprinkle salt to taste. Bake in the preheated oven for 30 minutes to roast. Remove apples from the oven and place in a food processor. Process until finely chopped; set aside.

*If you don't have time or want to roast apples, you're welcome to use jarred chunky applesauce.

Place 2 lbs of ground chicken, 1 cup processed roasted apples and 1/2 cup shredded cheddar cheese in a bowl. Add to the bowl 1/2 cup dried breadcrumbs, 1/4 cup milk, 1/2 tablespoon of poultry seasoning and salt and pepper to taste. Carefully combine all the ingredients until fully incorporated.

To bake:
Preheat your oven to 350.
Press the chicken, cheddar and apple mixture into the bottom of a jelly roll pan or baking dish until flat and even. Bake in the preheated oven for 15-20 minutes until cooked through.
Cut the baked chicken into squares, the size of your rolls. (I used whole wheat slider buns.)

To fry:
Heat a skillet with cooking spray.
Form the chicken mixture into small patties and fry until cooked through and both sides are browned.

To grill:
Heat grill to medium hot.
Form the chicken mixture into small patties and grill until cooked through and both sides are browned.
