Monday Madness....
Hey everyone! Kat here with the overwhelming feelings that a Monday brings every week, at least for me. LOL!!! Mondays bring back the mundane routine - back to work for me, back to school for the oldest and daycare for the youngest, homework at night and all of the other fun little tasks that we get to do as adults/parents during the week. That is why I like to make Monday night dinners quick and simple. I'll share our menu for tonight and hopefully it will inspire you to try something new which is easy, quick and healthy.
Chicken Breasts with Black Bean Salsa
1 tbsp. canola or olive oil
4 chicken breasts
oregano to taste
pepper
salt, if desired
1 can black beans, drained & rinsed
1 can petite diced tomatoes with Green Chiles or Jalapenos (depending on your heat preference), undrained
1/2 c. grated cheddar cheese
Heat oil in large skillet over med-high heat. Season chicken with oregano, pepper and salt. Cook until chicken is golden brown and almost cooked through. Reduce heat to medium. Add in black beans and tomatoes. Heat through until bean mixture is warm and chicken is completely cooked. Top with cheese and melt.
I like to serve this with steamed green beans and garlic bread.
