Monday Meals in Minutes

Hello everyone! Jennifer here with your next installment of minute meals. I am a big fan of Once a Month Cooking and meal prep. Due to allergies, my family has issues with a lot of pre-made meals that you can purchase in stores, so we've had to come up with our own versions and figure out creative ways of storing and packaging them.

We love soup. Soup is easy and versatile, and reheats well. I love that with these mixes, even my pre-teen kids can handle making dinner for the family. This recipe is our favorite:

Potato Soup Mix

2 ½ C Dried Potato Flakes
½ C Dried Powder Milk
½ C Grated Parmesan cheese
2 T Dried Parsley
2 T Chicken Bouillon Granules
1 T Minced Dried Onions
1 t Garlic Powder
¼ t Pepper

Add Later:
8 C Water

Bring water to a boil.

Add the contents of the Jar.
Let stand for 5 minutes.

Garnish with:
1 C Diced Cooked Ham
½ C Shredded Cheese
½ C Diced Onions

What is really great about this mix is it is easy to make in bulk. I mix up 4-6 batches at a time of the dry ingredients, and store them in either large glass jars or in ziploc bags. In a tightly sealed jar, you can store this mix for up to a year, and in bags up to 6 months.  This recipe is also extremely inexpensive to make- 4 batches of 8 servings each costs me approximately $10. That's about 35 cents per serving! And at less than 20 minutes work time, this is a great minute meal.
